Vegan Orange ‘Chicken’ from Brand New Vegan

Betty looks at me and says, “…this is the best of anything you have ever made, including the ‘Nice Cream’…”

Folks, when I fix something to eat, that gets ‘The Betty Approval’, THAT is a major deal !

When I get an approval that tops Our Nice Cream… WELL, I am shocked! (and very happy)

Betty also said, ” … If you didn’t tell people it wasn’t chicken, I don’t think they would know…”.

I agree.

In fact, I think the consistency and texture are more acceptable to my palette since I recall several Orange Chicken take outs and buffets that offered such poor quality cuts of dark meat chicken parts, that the mouth full of gristle and under cooked dark meat, well, it was a turn off….

I had the Cauliflower already cut and separated because earlier I had made a batch of Cauliflower Taco Stuff ( OUR FAVORITE !!)

Betty had just went to spend 45 minutes on the treadmill, and I went to make this Vegan Orange Chicken recipe for the first time.

It was all coming together when she came to the kitchen and asked, “What are you doing NOW!”.

(Bless her heart … …)

My reply was as usual, “… PLAYING…”.

I pointed to the recipe and she said she would take hers in a bowl.

A few things I did different than the printed recipe…

I did not have mushrooms, nor a Red Bell Pepper.

The mushrooms were already in the prepared,  but not cooked Cauliflower Taco Stuff… which worked out great.  I substituted two cups full of that, for the mushrooms and Red Bell Pepper.

ALSO I used sucanat in place of sugar. I could have used Date Sugar and been just as fine!

(Date Sugar is considered a Whole Food by most)

Also when the recipe called for the 2 Table Spoons of Orange Juice, which I obtained by squeezing an Orange literally to pieces. THEN I read I needed two table spoons of the zest of an Orange.

There was no way to ‘zest’ that Orange.

So, I cut a portion as small as I could get it, and threw it in the medium sauce pan.

Personally, I preferred the bigger than zest bites of Orange! (Then I ate the remaining Orange!)

And I had just prepared Barley, so I used that in place of Rice.

None the less, it was wonderful results!
