Seasonings, the MORE the BETTER! YUM!

If the recipe calls for two cloves of a Garlic Pod, in my opinion, 8 will be better.

If the recipe calls for a half of a teaspoon of Cumin, possible three TABLESPOONS will be better…

etc…etc…etc

Early on in my transition from Cholesterol filled Animal Products to Plants (NO CHOLESTEROL at ALL), I learned from folks like Fatmanrants.com that you can and should add SPICES till it tastes like YOU LIKE IT!

I learned from Nutritionfacts.org  that SPICES (without added salt) are some of the largest amounts of antioxidants on the Planet for the least amount of expense….so ADD ALL THE SPICES YOU WANT!

It is good for you, and ‘gooder’ tasting too!

(Yeah, I just made up that word)

While learning new things everyday, and trying new recipes almost every few days, I have discovered a SHOCKING TRUTH….

Animal Products are so altered with seasonings, that if we eat them unseasoned, we would not like the taste, texture etc etc…

The taste of dead animal body parts boiled, roasted microwaved, grilled … whatever,  is an acquired taste.

You may reply, “… sure I add steak sauce to my steak …”, or “…NOT ME! I like it fresh off the grill or BBQ with nothing added, just the burned fat!”.

Ok, I understand, the later. As I typed, I heard MY VOICE saying those words.  That was my preference, the flavor of the the FAT.

Of course we now know the fumes from the wood as well as the charcoal or propane flames are suspect as carcinogenic , as well as the muscle tissue under that much heat.

(You have heard how toxic is it to live next to a Chinese Buffet right?… the fumes from the kitchen exhaust?)

But the acquired taste is what I want to point out.

And the fact is with Animal Products, you are eating a dead Animal, who was put to death in a horrible trauma filled and filthy room, and therefore you are eating the ‘terror’ that coursed through the body of the creature as it realized it was being slaughtered.

‘That’ terror then becomes a part of the one eating the dead body.

Great flavor though!  HELL YEAH ! BUTT BACON!!! Hoorah!  I AM A MAN!!!! ( you get the picture)

All of this has come to this realization…

When you can take Cauliflower, Walnuts, Mushrooms, AND SPICES and make them in a manner that resembles a learned enjoyment of Hamburger Meat… that is a learned ‘taste’.

It is a learned taste for something that has NO ILL EFFECT upon the HEALTH and Well Being of Humans nor Animals.  It is a learned taste of a product that is welcomed as a smart replacement of a product such as Hamburger, be it beef, pork, chicken, or poultry.

When you can take Cauliflower and make a Orange Flavored Stir ‘Fry’ item, that resembles the worse parts of Chicken Dark Meat and in fact tastes better that the real parts of Chicken Dark Meat, and it does not have fecal material, nor worse cholesterol than red beef, then that is a smart thing to do, as you learn to enjoy the taste.

(The thing is with Cauliflower, you can eat it undercooked, OR RAW, and it will not cause harm to you… but the gristle filled 2nd rate parts of the Dark Meat of a dead fecal covered chicken trimming…. ?  Good Luck.)

I am quite pleased to find that my taste has changed.  I am no longer an addicted victim of salt, sugar, oil fried,  and added chemicals necessary to keep me feeding at the trough of an Industry and Government that gives a damn about causing the largest form of cruelty in the known Universe.

Bottom line…..

You can add healthy spices to vegetables, beans, peas, legumes, nuts and create the most delightful meals you can imagine.

I do not count calories, measure protein, nor fear CARBS.

I am a free man on those issues, not a slave.

Vegan Orange ‘Chicken’ from Brand New Vegan

Betty looks at me and says, “…this is the best of anything you have ever made, including the ‘Nice Cream’…”

Folks, when I fix something to eat, that gets ‘The Betty Approval’, THAT is a major deal !

I agree.

In fact, I think the consistency and texture are more acceptable to my palette since I recall several Orange Chicken take outs and buffets that offered such poor quality cuts of dark meat chicken parts, that the mouth full of gristle and under cooked dark meat, well, it was a turn off….

I had the Cauliflower already cut and separated because earlier I had made a batch of Cauliflower Taco Stuff ( OUR FAVORITE !!)

Betty had just went to spend 45 minutes on the treadmill, and I went to make this Vegan Orange Chicken recipe for the first time.

It was all coming together when she came to the kitchen and asked, “What are you doing NOW!”.

(Bless her heart … …)

My reply was as usual, “… PLAYING…”.

I pointed to the recipe and she said she would take hers in a bowl.

A few things I did different than the printed recipe…

I did not have mushrooms, nor a Red Bell Pepper.

The mushrooms were already in the prepared,  but not cooked Cauliflower Taco Stuff… which worked out great.  I substituted two cups full of that, for the mushrooms and Red Bell Pepper.

ALSO I used sucanat in place of sugar. I could have used Date Sugar and been just as fine!

(Date Sugar is considered a Whole Food by most)

Also when the recipe called for the 2 Table Spoons of Orange Juice, which I obtained by squeezing an Orange literally to pieces. THEN I read I needed two table spoons of the zest of an Orange.

There was no way to ‘zest’ that Orange.

So, I cut a portion as small as I could get it, and threw it in the medium sauce pan.

Personally, I preferred the bigger than zest bites of Orange! (Then I ate the remaining Orange!)

And I had just prepared Barley, so I used that in place of Rice.

None the less, it was wonderful results!

Where do Marathon runner go ‘potty’?

It just occurred to me there is usually a 50 mile Bike ride in there and they are constantly drinking water or something…. and,  do you have ‘to go’?

Ok, I have been listening to Finding Ultra: Rejecting Middle Age, Becoming One of the Worlds Fittest Men, and Discovering Myself

I bought it through Amazon, in the audio book format.  Actually, my youngest son bought it several months ago when I needed to use a credit or lose it…. when I saw the title and the Author I remember thinking  WTH !?  What is ULTRA and that ‘RICH ROLL’ cannot be a real name?

But Mr J (my youngest son) did participate in some running programs in School, so I thought, well fine.

BUT months and events have passed by,  and the next thing I know I have the treadmill dusted off and I am not only walking on the treadmill, but also lifting weights at the same time (much to ‘someones??’ concern!)

“… I am getting healthy, why not get FIT and SEXY !!??…”

Yeah!  WHY NOT !?

So I take an embarrassing picture I plan to retake next year, and see what has happened in 12 months.

I have 10 months to improve that pose (and that TAN !! UCK!)

LOL !  The other day I was looking over some of my first Blogs, where I had posted a ‘boasting’ about being on the treadmill for 30 minutes, walking and going over 1 mile…..I was so proud!!

Today, 2/23/2018 I completed the following after a 15 minute warm up, and then 5 minutes on the treadmill at 2 mph, and elevation at #10….

The pic on the left is One Hour and ten minutes (minus the 5 at 2.0 mph, and you have 65 minutes at 2.8 mph…).  The pic on the right shows a total distance of 3.21 miles)…. not bad I say !

Oh, by the way, as I was closing this all down, I noticed the elevation mode was still showing an ‘incline’ of .05 grade.

Well that is just sweet now isn’t it!

I stopped drinking MILK in 2008 …

Betty came home one day, telling me she had received an email with the story, or a video, about how much pus was in the milk we drink.

PUS!?

OMG!

After that, I never put a glass of that PUS JUICE to my lips.

She taunted me and insisted I watch the video.

I said NO!   All I had to do was think about it and my stomach was, and still is, repulsed.

I remember reading an article that showed the good ol’ US of A allowed the most pus in the milk, next to Brasil…

Folks, I took it so severely, I even STOPPED DRINKING CHOCOLATE MILK.

Blood and Pus with cookies? NO THANKS!

To be fair, the blood and pus allowed in the American Latative Growth Hormone Filled Utter Secretions is not the most evil thing in calf growth hormone, casein (cows milk protein) is the real problem with milk.  (See T.Collin Campbell – THE CHINA STUDY for tons of evidence of why consuming  any milk product is TOXIC !!)   [Unless you are a NEWBORN calf … needing to ingest that GROWTH HORMONE FILLED SECRETION]

There are hundreds of videos on line where you can actually see the actual dairy process, from either side of the issue.  You can see the Contented Cows depicted by the Dairy Industry, and the horrid evidence of the cruelty, and filth that does occur.

One side is full of propaganda, and the other side will embarrass you for believing you are a compassionate, reasonable human.

Yes I could not stand the thought of drinking that ‘utter juice’, YET I did continue to consume copious amounts of Blue Bell Ice Cream.

Yeah, I know…. hypocritical, huh?  You are correct.

But Ice Cream left a thick sugar filled coating in my mouth, throat, and all my Cardiovascular System, and not on my lips…. somehow, THAT was acceptable.

What stopped the consumption of Ice Cream?

I do not even miss Ice Cream one little bit.  (I will be paying monthly payments on this Triple By Pass until late 2025.  It is a miracle that the ‘business’ I am making payment to each month, has given me that ability to make payments.)

[ However, when I told them I had since retired, and the payment was now more than 10% of my monthly income {more than a ‘Biblical Tithe’} and could I adjust the monthly payment, ‘they’ said NO!  If I made any less of a payment they would turn me over to a Collection Agency, and I should be ‘glad’ they allowed payments for more than three months after the bill was presented…]

Ok.

Not only do I chose to stop using any dairy product  for my HEALTH, I have seen some of the videos showing the evil side of the government subsidized industry and feeling the horror and cruelty which we as humans do not want to admit to being participants.

This is my story.

When this journey started for me in May 2015, I will be honest, I looked grossly overweight and …unhealthy.  There is no way that ‘chubby’ RayRay was cute.

It was gross. ( I know in these crazy days we are not ‘supposed to’ say, that someone grossly over weight is unattractive, but this is my story and I say ‘Keep that insulting ‘participation award’ … I won no prize.  I was fat and gross’.

This is my ‘Breakfast’ 02/22/2018 on a cold morning after nearly 3″ of rain falling, and THUNDER ICE STORMS.  ( As a mater of fact, we are having one at this moment !)

I believe that a large amount of what I have been taught in my 63 years and 14 days, is bull crap,  Merchandising … to program ‘me’ and YOU to be obedient CONSUMERS.

I question everything.  I refuse to listen to Radio, and watch regular TV.  I hate commercials in any form or fashion.

OK, THE PICTURE of my BREAKFAST today….

If you think you HAVE TO EAT small portions, cut the amount of food, count calories, measure protein, OR BE AFRAID OF CARBS!!!! …. you are believing BULL CRAP!

Get that merchandising propaganda BULL CRAP out of your mind!!!  

To lose weight, eat all you want.  EAT ALL YOU WANT!!! and lose weight…

The food just needs to be the REAL, HEALTHY KINDS of FOOD.  Whole Food, Plants, Beans, Seeds, Nuts….. NOTHING PROCESSED !!  WHOLE FOODS!

Then, the more you eat, the more weight you lose, and the more HEALTH YOU GAIN!!

In the plate about, there is a fairly common assortment, and amount of what I have for breakfast.  NOT TYPICAL!

There are left overs form yesterdays lunch.

Chopped and raw, Collard Greens, Turnip Greens, and Kale.  Barley. Fresh tomatoes, Purple Cabbage (fresh), Brown Rice prepared in spiced tomatoes (left over from Supper last evening), also left over from Supper last evening are enchiladas with NO OIL tortillas filled with Cauliflower Taco Stuff, and sauted mushrooms , A Garden Fresh Salad with lots of Red Onion diced,(covered with the No Egg-No Oil Mayo).

Also yesterdays Breakfast left overs of, all the aforementioned Leafy Greens, (yes, for breakfast)   Banana, Strawberry, pineapple, BlueBerries, Grapefruit, Orange  Salad, with Flax Seed, Gun Powder Green Tea, and Hibiscus Tea Leaves ground fresh and thrown in the mix…

… and the addition this morning is   a Baked Yukon Gold Potato then roasted in the Hot Air Cooker for 7 minutes at 400 degrees ( no seasonings added.) and the other half of Betty’s Banana.

I think that is all ….

When I walked in Betty looked at the size of the plate of food and says, “OINK OINK! Your a PIG!!”

And you know what?  I ATE THE WHOLE PLATE FULL!

Yep a PIG never going hungry and having lost 79 pounds, jogging about 10 miles a week, lifting weights … … … (one day last week I measured almost 9 miles in one day! Three of that while jogging!)

And LOVING EATING LIKE A PIG and KNOWING I am eating as healthy as possible.

My Favorite Recipes!

I have dear friends starting The Starch Solution.

I told them I would send my favorite recipes….

#1.

Amazing Cauliflower Tacos (click Link)

This is a weekly thing at our house.  I know the Walnuts, and Mushrooms may raise an eye brow, but Betty and I have fallen for this one!

The changes I have made are to use a big knife to dice up the Cauliflower instead of the food processor.  I do use the Food processor for the Walnuts and Mushrooms, but just a pulse.  The bigger the chucks, the better.

Another change to the original recipe, is extra spices to suit my taste….especially Cumin.

And I add at least six or eight fresh garlic pods, smashed for at least 10 minutes, to the mix.

You can never eat enough fresh garlic, always smashed, crushed or chopped 10 minutes before use.

We use this in Spaghetti Sauce, in Salads, I have even put it on my Breakfast Fruit Mix.  We use it A LOT !

#2.

Herb Crusted Pizza Dough

I use half Whole Wheat Four, and the King Arthur Unbleached Bread Flour since it contains more wheat protein than All Purpose, which allows for more gluten formation.

(No I am not afraid of Gluten Scare, nor calories, nor protein, nor Carbs.)

Betty really likes the Bean Patty Recipes!

BLACK BEAN BURGERS

I use this often as a refrigerator ‘clean out’.

I use any bean I want, or even Blackeyed Peas or several Beans and Peas, and left over Steamed Leafy Greens (usually .99 cents a bundle, or less).

I use home cooked, canned (prefer Low Sodium)… again think refrigerator ‘clean out’

Tons of spices.

REMEMBER IF you add spices for ‘taste’ add as much and as many after, AFTER you have cooked or prepared the product.  It will taste better.

Bettys Fav Cheese Sauce with NO CHEESE/DAIRY !

BEST VEGAN NACHO ‘CHEESE’ SAUCE

In place of Pimientos we use Red Bell Peppers(in water) since they are cheaper.

The first batch was so good we ‘made out’ in the kitchen for several minutes between ‘bites’ of the final product.  This first batch was made in the Food Processor and left the Cashews a bit ‘grainy’ even after they were soaked over night.

The second batch was soaked less than two hours, and done in a Garage Sale Blender, and it was WONDERFUL TEXTURE.  ( No ‘making out’ after the 2nd batch, but I am officially crowned the HERO in Bettys life)

MY FAVORITE “CHEESE” SAUCE

Amazing Vegan Cheese Sauce from Brand New Vegan

Folks, it is Golden Yukon Potatoes and Carrots, and spices.

It is 100% Compliant !

Indulge.

(OH! Save the ‘water’ from boiling to use for saute and stir fry ‘liquid’.  I save all possible veggie trimmings in the freezer, and then slow boil them and make my own BROTH!)

SMOKY VEGAN CARROT DOGS

When they are ‘ready’ for the final stage, they are best gently marked over open flame.

(Did I mention we buy Carrots in BULK?)

Elton LT loves them too!

No Tuna Salad

Get the capers, tahini, and Maple Syrup.

This stuff is ‘magic’.

I add extra pickles.

NO EGG SALAD

Another Betty Approved!!! REALLY GOOD TOO!

This is a part of the No Egg Salad above.

EGG LESS MAYO !

I eat it like Sour Cream too.

Generally I try to use Low Sodium Soy Sauce on everything, and in place of all oils when I am stir frying.  Left over dill pickle juice is great too”

Get a spray bottle sold for SPRAYING OILs and never use it for that toxic processed death, and use it to spray the Low Sodium Soy Sauce, Lemon Juice, Dill Pickle Juice etc [ I am getting hungry]

Get Parchment Paper.  Never run out.

Use it when Oven Roasting Already Boiled or Cooked Potatoes. (AGAIN, season after they are golden brown out of the oven, spray with Low Sodium Soy, then sprinkle seasonings and ENJOY!!

Use Parchment Paper when you make the Cauliflower Taco Stuff !!

We use in rotation, Pinto Beans, Garbanzo Beans, Black Beans, and Mayacoba Beans, ( also called Canary Beans, or Peruvian Beans).

White Rice is ok, but if possible use Brown Rice.

My Favorite Taters at this time are Golden Yukon, or is it Yukon Gold, and I try to buy them in the ‘discounted’ section of the Produce Section.

If you like Hot Sauce, find the lowest in Sodium, or make your own. ( I Need to make my own….)

I am a very ‘cheap skate’ type of person.

I hate to throw anything away.

I am always looking for a bargain.

But, anything I pay for food is going to be cheaper for the future in medicines, doctor visits, and Chronic Disease.

You want to STOP Your High Blood Pressure Medications ?

Is it possible you can get off your Blood Pressure Medications?

I did.

After I worked out for 20 minutes yesterday 2/17/2018 warming up for a jog of 3.03 miles at 2.8 mph, and achieved that in 64 minutes…. ( after the warm up)

… I took my BP (Blood Pressure) and it read 104/62.

I took my BP two days before that, and after two cups of Bettys coffee, and my BP was 104/63.

That is about what my BP reads most the time for the last year.   I have been taking it since October 10, 2015 when I returned home from my Triple By Pass.

On February 28, 2016, the Cardiologist told me I would be on at least three BP Medications for the remainder of my life, (as he laughed at me, saying what I ate made no difference to my health… just eat what I wanted in moderation.  He also laughed moments later when I told him I was eating only Whole Foods, Plants and Beans …. no Animal Products ).

That was at the three month check up, and he doubled my Cholesterol Statin Drugs.

By the end of the next six weeks, I had removed all medications from my life, and wondered ‘who is laughing now, Doc?’

(Disclaimer: I was a ‘bad’ boy for doing that.  I am not a Doctor. I read Sci Fi books, American History, and Biographies of weird people who eat only plants.  I am a Proud Son of a Confederate Veteran, a Native Texan, I have a very long Pony Tail, and my DNA results from Ancestry tells me I am 30% Irish . Do I appear as someone you should trust for making Medical Decisions on??  I do not like being laughed at, and no one should ever take my actions as ‘what you should do’…. OK!?  )

I do say that I take responsibility for my health.  I base my actions on several sources.  Some of these sources do not agree one, with the other on all issues.  In a sense, I pick and choose.

There are some ‘voices’ in the ‘DIET’ world that I would not walk across the street to ‘hear’, nor do I read their books or articles.

There are a few I trust.

Dr Michael Greger is one of them.

I have had so many people say “MY GOD THAT IS TOO LOW!!! GET TO A DOCTOR!!!!”

No, it is not too low, if all you eat is Whole Food Plant Based real food.

Why are we not taught by ‘The Greatest Medical Machine’ in history how to be cured of Life Style Chronic Disease? … and yet we in America see increases of all the Chronic Life Style Diseases.

Broken Road-a song on my Play List

More from the Work Out Play List and Motivation.

Bless the Broken Road

Maybe not quite a song one would expect on a Workout Play List but there it is.

I have noted several times, that motivation for ME, comes from unusual places.

This is one of the songs Betty and I have had ‘out of the body’ experiences to while dancing, where everything and everyone disappears from the floor, time stops, and all that exists is the meeting of our eyes, and the movement of our bodies, which seem to become one.

Those are special times with the one you love.

Betty and I have shared many of those.

So, that song is one my Workout Play List, and it motivates me for many reasons.

This is one of the things I think about when I hear this song now.

What I put Betty through as well as other family members, and friends.

I chose to cause them suffering by the lifestyle choices I made that brought me to this hospital bed after Triple By Pass.

My choices almost caused a Broken Road to occur… almost a dead end.

“…I think about the years I spent, just passing through,
I’d like to have the time I lost, and give it back to you…”

I did have a opportunity to give some lost time back to everyone.

I guess I came close to ending it all with the condition in which I had placed myself, and the surgery too.  I mean, they had to scrounge around four places in my legs to find enough usable veins to sew together, to be able to By Pass the clogged Arteries on my heart.

(You do know that ON AVERAGE, a By Pass or Stent Placement will occur again with in a year for about 34% of people having their first?) [Not me!!]

But, as it stands today, it seems I escaped the ‘Broken Road’ as an exit, and now it has become a new path to be shared.

I just started reading a book Finding Ultra by a fellow named Rich Roll.

He didn’t have a heart attack but he had a number of stages he went through that were major changes for him

Good story!

We all have events that come to our lives and how we react to these will determine the road we follow.

Sometimes the road is much better and more interesting than the road we were on…

Thank goodness for the Broken Roads we encounter.

Thank the Road that sometimes becomes Broken, and offers a change, and thank goodness for the chance to make a change.
