My Favorite Recipes!

I have dear friends starting The Starch Solution.

I told them I would send my favorite recipes….

#1.

Amazing Cauliflower Tacos (click Link)

This is a weekly thing at our house.  I know the Walnuts, and Mushrooms may raise an eye brow, but Betty and I have fallen for this one!

The changes I have made are to use a big knife to dice up the Cauliflower instead of the food processor.  I do use the Food processor for the Walnuts and Mushrooms, but just a pulse.  The bigger the chucks, the better.

Another change to the original recipe, is extra spices to suit my taste….especially Cumin.

And I add at least six or eight fresh garlic pods, smashed for at least 10 minutes, to the mix.

You can never eat enough fresh garlic, always smashed, crushed or chopped 10 minutes before use.

We use this in Spaghetti Sauce, in Salads, I have even put it on my Breakfast Fruit Mix.  We use it A LOT !

Herb Crusted Pizza Dough

I use half Whole Wheat Four, and the King Arthur Unbleached Bread Flour since it contains more wheat protein than All Purpose, which allows for more gluten formation.

(No I am not afraid of Gluten Scare, nor calories, nor protein, nor Carbs.)

Betty really likes the Bean Patty Recipes!

BLACK BEAN BURGERS

I use this often as a refrigerator ‘clean out’.

I use any bean I want, or even Blackeyed Peas or several Beans and Peas, and left over Steamed Leafy Greens (usually .99 cents a bundle, or less).

I use home cooked, canned (prefer Low Sodium)… again think refrigerator ‘clean out’

Tons of spices.

REMEMBER IF you add spices for ‘taste’ add as much and as many after, AFTER you have cooked or prepared the product.  It will taste better.

Bettys Fav Cheese Sauce with NO CHEESE/DAIRY !

BEST VEGAN NACHO ‘CHEESE’ SAUCE

In place of Pimientos we use Red Bell Peppers(in water) since they are cheaper.

The first batch was so good we ‘made out’ in the kitchen for several minutes between ‘bites’ of the final product.  This first batch was made in the Food Processor and left the Cashews a bit ‘grainy’ even after they were soaked over night.

The second batch was soaked less than two hours, and done in a Garage Sale Blender, and it was WONDERFUL TEXTURE.  ( No ‘making out’ after the 2nd batch, but I am officially crowned the HERO in Bettys life)

MY FAVORITE “CHEESE” SAUCE

Amazing Vegan Cheese Sauce from Brand New Vegan

Folks, it is Golden Yukon Potatoes and Carrots, and spices.

It is 100% Compliant !

Indulge.

(OH! Save the ‘water’ from boiling to use for saute and stir fry ‘liquid’.  I save all possible veggie trimmings in the freezer, and then slow boil them and make my own BROTH!)

SMOKY VEGAN CARROT DOGS

When they are ‘ready’ for the final stage, they are best gently marked over open flame.

(Did I mention we buy Carrots in BULK?)

Elton LT loves them too!

#7.

No Tuna Salad

Get the capers, tahini, and Maple Syrup.

This stuff is ‘magic’.

I add extra pickles.

NO EGG SALAD

Another Betty Approved!!! REALLY GOOD TOO!

This is a part of the No Egg Salad above.

EGG LESS MAYO !

I eat it like Sour Cream too.

Generally I try to use Low Sodium Soy Sauce on everything, and in place of all oils when I am stir frying.  Left over dill pickle juice is great too”

Get a spray bottle sold for SPRAYING OILs and never use it for that toxic processed death, and use it to spray the Low Sodium Soy Sauce, Lemon Juice, Dill Pickle Juice etc [ I am getting hungry]

Get Parchment Paper.  Never run out.

Use it when Oven Roasting Already Boiled or Cooked Potatoes. (AGAIN, season after they are golden brown out of the oven, spray with Low Sodium Soy, then sprinkle seasonings and ENJOY!!

Use Parchment Paper when you make the Cauliflower Taco Stuff !!

We use in rotation, Pinto Beans, Garbanzo Beans, Black Beans, and Mayacoba Beans, ( also called Canary Beans, or Peruvian Beans).

White Rice is ok, but if possible use Brown Rice.

My Favorite Taters at this time are Golden Yukon, or is it Yukon Gold, and I try to buy them in the ‘discounted’ section of the Produce Section.

If you like Hot Sauce, find the lowest in Sodium, or make your own. ( I Need to make my own….)

I am a very ‘cheap skate’ type of person.

I hate to throw anything away.

I am always looking for a bargain.

But, anything I pay for food is going to be cheaper for the future in medicines, doctor visits, and Chronic Disease.
